As it’s a new year and undoubtedly at least 50% of the population has made the resolution to try and lose weight this year (me included!) I thought I would make the first recipe post of 2017 a slimming world recipe. So here is my Slimming World minced beef hash recipe. This is a hearty, simple and filling recipe that I made for me and Jon just before Christmas, using the extra lean mince beef that we had in our Musclefoods hamper. It’s syn free on the current Slimming World plan and you can pack in lots of free or super free veggies. It’s also a great recipe to make at the end of the shopping week to help you use up any stray veg in your fridge as you can add pretty much any vegetables you have lying around (within reason obviously, not too sure an artichoke or avocado would work!) It’s a firm favourite with all the family in the Two Hearts household and I’ve no doubt Elian will be trying it soon too.

Slimming World Minced Beef Hash Recipe

This is a super simple and really tasty meal, that can help you pack in some free and super free foods. Hearty and homely this recipe can help you use up some of that forgotten veg in your fridge at the end of the week. Its a family favourite here!

Ingredients
  1. 1 Large Onion – diced
  2. 400g Extra Lean Beef Mince
  3. 1 tin Heinz BBQ Beans
  4. 2 Garlic cloves – peeled and diced
  5. 1tsp Ground Cumin
  6. 1 Large Carrot – peeled and diced
  7. 150g Potatoes – peeled and diced
  8. 150g Sweet Potato – peeled and diced
  9. 1 Large Leek – sliced
  10. 1 tin Chopped Tomatoes
  11. 1tsp Mixed Herbs
  12. Frylight or other low calorie cooking spray
Instructions
  1. Heat the cooking spray in a large deep pan, add onions and fry for 2-3 minutes
  2. Add the garlic and cumin to the pan, stirring them into the onions to release the flavour
  3. Add the minced beef and cook on high, making sure to stir it and break up the lumps as you go. It should take around 5 minutes to brown
  4. Add all the remaining ingredients, bring to the boil then reduce heat to a simmer and cook covered for around 15 minutes. Stir occasionally incase the liquid dries up a little faster.
  5. When the liquid has reduced it is ready to serve.
  6. Season with salt and pepper if needed, but we found the BBQ beans and spices were enough
  7. Serve with with a corn on the cob or a crispy roll and enjoy
Notes
  1. If you’ve got other veggies left in the fridge why not try adding them, celery or peppers would work great
  2. Try the chilli beans instead of the BBQ ones (just remember to check if they are synned)
  3. If you fancy a bit of a kick add a diced chilli with the garlic and cumin
