Fillings
  1. 7 large peaches, ripe pitted and sliced (inch pieces)
  2. 2tsp pure maple syrup
  3. 4tsp arrowroot powder
  4. 2tsp pure vanilla extracts
  5. Tsp cinnamon, ground
Toppings
  1. cup soy milk, unsweetened
  2. 1 tsp fresh lemon juice
  3. 2 cups all purpose flour
  4. 1 tsp baking powder
  5. 1 tsp cinnamon
  6. tsp baking soda
  7. cup coconut sugar
  8. tsp sea salt
  9. cup virgin oil, melted
  10. 1 tsp pure maple syrup.
Instructions
  1. Before adding any ingredient, heat the oven to 350 degrees F.
  2. Add all the filling ingredients in a mixing bowl and mix thoroughly until they combine smoothly.
  3. Spread out this fruit mixture in one even layer in a baking dish (about 8 by 11 inches)In a small mix bowl combine the soy milk and the fresh lemon juice, set it aside to curdle for about 5 minutes.
  4. In a separate bowl, mix the all-purpose flour, cinnamon, baking powder and baking soda, add coconut sugar and sea salt. Whisk until they combine.
  5. Add coconut oil and use your hands to evenly moisten the flour mixture.
  6. Combine with the soy milk mixture and stir thoroughly to incorporate perfectly.
  7. Add the toppings over your fillings and bake for 20-25 minutes. Or until the fruits start to bubble and the toppings start to brown around the edges.

Serves 12
A simple recipe for healthy and tasty vegan peach muffins. Great for breakfast or as a sweet treat.

  1. 2 cup spelt flour
  2. 1 cup brown sugar
  3. 2 tsp baking powder
  4. 1 tsp baking soda
  5. 1 tsp salt
  6. 1 cup rice dream
  7. 1tsp lemon juice
  8. 1 cup olive oil
  9. 1 tsp vanilla extract
  10. 1 cup fresh peaches - diced
Instructions
  1. Preheat the oven to 200C (400F or Gas mark6) and place the muffin cups in the muffin tray
  2. Mix all the liquid ingredients and the brown sugar
  3. Mix all the other dry ingredients and fold in the peaches. Combine the two mixtures and spoon the mixture into muffin tins
  4. Bake for about 20 minutes until they lightly brown

  3. 1 cup tomato sauce
  4. 1 tsp garlic powder
  5. 4 tsp cider vinegar
  6. 1 tsp chipotle powder
  7. 1 tsp sea salt
Instructions
  1. Combine the onions and peaches in a medium-sized pot. Cook, stirring occasionally for 15 minutes
  2. Add tomato sauce and continue cooking for another 5 minutes.
  3. Add garlic powder, vinegar, chipotle and salt.
  4. Transfer the mixture to a blender and blend until the mixture is perfectly smooth.

Ingredients
  1. 4 medium-sized peaches pitted and sliced
  2. 1 Green apple, peeled and sliced
  3. 1 Cup water
  4. 2 tsp sugar, natural
  5. 1 tsp nutmeg
  6. 1 tsp cinnamon
  7. 1 tsp corn starch
  8. 2 tsp water
Instructions
  1. Add the peaches, green apple, water, cinnamon and nutmeg to a saucepan and cook to boiling.
  2. Reduce to simmer and cook for another 5-6 minutes, or until the fruit softens.
  3. Combine all the other ingredients in a mixing bowl, and stir thoroughly.
  4. Add the mixture to the peaches and keep cooking until the sauce thickens to satisfaction, you may want to mash the apple and fruit slightly to break it down,
  5. Serve over a stack of fluffy pancakes for the ultimate Sunday breakfast treat

Vegan Peach Crisp Recipe
This is a great take on a healthy peach pie, the nuts produce a lovely crunch crust to the top of the warm fruit peach pie filling.

  2. 1 tsp olive oil
  3. 1 cup pecans
  4. 2 tsp maple syrups

  1. 8 sliced peaches
  2. 2 tsp flax, ground
  3. 1 tsp cinnamon
  4. 1 tsp maple syrup
Instructions
  1. In a large mixing bowl mix all the toppings ingredients. Process the mixture using a food processor until the nuts get well chopped and the mixture gets sticky.
  2. Mix all the fillings ingredients together in a large bowl.
  3. Transfer the fillings to a pie plate and add the toppings evenly.
  4. Bake the mixture for 30 minutes at 180C (350F or Gas Mark 4)
  5. Serve warm.
