Me and Jon are trying to start eating more healthily again and get back on track with our weightloss journey, whilst also keeping to a budget! We find the best way to do this is to prepare freezer slow cooker freezer meals in advance. I can prep multiple at the same time, saving me time and money, which is key to a busy mums life. 

This week I spent around 1.5 hours prepping the recipe bags and made 14 evening meals to keep us fed for the next 2 weeks! I love that we can simply pull a bag out of the freezer the night before and have a healthy home cooked meal ready for us each evening with minimal effort, I just have to make rice, pasta or potatoes to go with them usually. I also find that we waste a lot less food by doing this method. I only cook portions enough for the 3 of us usually, and if there is any left overs either Opie gets them or one of us has them for lunch the next say. Plus when shopping I just buy the quantity needed for the recipes and as they are all prepared straight away there is zero risk of anything being left to turn bad.

So here are 3 family friendly recipes that are all really simple to make and are hearty and flavourful, perfect for the winter months.

Creamy Garlic Chicken Slow Cooker Recipes
Serves 4
We love garlic in our house and this creamy garlic chicken recipe for the slow cooker is perfect for a big family meal. Prep in advance and freeze, then just dump and go when you require it. Super simple, super tasty and pretty cheap!

Ingredients
  1. 4 Chicken Breasts (diced)
  2. 500g Baby Potatoes (diced)
  3. 1 Large Leek (diced)
  4. 1/4 Cup White Wine
  5. 4 Garlic Cloves (crushed) or 2tsp Lazy Garlic
  6. 2tsp Lemon Juice
  7. 1tsp Dried Thyme
  8. 2tsp Smoked Paprika
  9. 1 Cup Double Cream
  10. 1/2 Cup Chicken Stock (cooled)
Instructions
  1. Label your bag
  2. Place all your ingredients in bag and freeze
  3. Remove bag night before required to defrost
  4. Dump in slow cooker for 6 hours on high and 8 hours on low
  5. Serve with rice and enjoy

Mongolian Beef Slow Cooker Recipe
Serves 4
This Mongolian beef recipe is packed full of flavour and is a firm favourite with all of our household. The perfect recipe for crockpot freezer prepping so make ahead of time to save yourself some time and stress.

Ingredients
  1. 1kg Diced Stewing Beef
  2. 2 Peppers (diced)
  3. 2tsp Oil
  4. 2tsp Lazy Garlic or 3 Crushed Cloves of Garlic
  5. 1/2 Cup Soy Sauce
  6. 1/2 Water
  7. 2tbs Soft Brown Sugar
  8. 1/2 Cup Hoisin Sauce
Instructions
  1. Label your bag
  2. Place all prepped ingredients in the bag and freeze
  3. Remove from Freezer to defrost the night before required
  4. Place in slow cooker for 8 hours on high
  5. Serve with rice and enjoy!

Shredded Roast Beef with Carrots
Serves 4
This has to be one of the tastiest recipes I have every made, honest! The brisket ends up so tender after cooking in the slow cooker that it just falls apart. We had enough for the next day but we both decided to have seconds instead!

  2. 600g Baby Carrots
  3. 3tbsp Oil
  4. 2tbsp Red Wine
  5. 1 Packet Beef Casserole Seasoning
Instructions
  1. Label your bag
  2. Place all your prepped ingredients in bag and freeze
  3. Remove from freezer to defrost the night before it is required
  4. Dump in slow cooker on high for 8-10 hours
  5. Shred your beef and serve with roast potatoes
