Slimming World Feta and Roast Chicken Couscous Salad

This is a fresh, light and filling couscous salad recipe which is perfect for lunch on the go or whilst at work. Use the feta as you HEA and its completely free and packed with speed food!

Ingredients
  

  • 1 cup dried couscous plus 1 1/2 cups boiling water
  • 1/4 cucumber diced
  • 1 Red Pepper diced
  • 2 Celery Storks diced
  • 5 Cherry Tomatoes diced
  • 120 g Sliced Roast Chicken we use Tesco Everyday Value sliced chicken packet
  • 90 g Feta diced
  • 1 tsp Lemon Juice
  • 1-2 tsp Fresh Diced Mint
  • 1-2 tsp Fresh Diced Coriander
  • 1-2 tsp Fresh Diced Parsley

Instructions
 

  • Make up the couscous with the boiling water and fork through to break up lumps
  • Add all the ingredients and a good squirt of lemon juice and mix it all through
  • Popped it in the fridge to cool then enjoy on its own or on a bed of lettuce!

Notes

If you leave out the chicken you can also serve it alongside roast chicken, steak or even salmon
fancy a fruity twist? Add pomegranate seeds!
