Tea Loaf Recipe
This is a great simple tea loaf recipe that produces a moist fruit packed loaf, great to eat toasted or straight as it is topped with butter.

- 1 bottle of Sweet Sally Spiced Tea
- 225 g mixed dried fruit these require soaking overnight or for at least 4 hours
- 225 g self-raising flour
- 110 g superfine sugar
- 1 large beaten egg
- 2 tablespoons orange marmalade
Place the dried fruit in a bowl and pour over the entire bottle of Tea, place in the fridge to soak overnight or for at least 4 hours
Grease a 675g loaf tin with butter (turns out I didn't have one so used the tin from my bread maker)
Preheat your oven to 180 or Gas Mark 4
In a large bowl combine the flour, sugar, eggs and marmalade
Add the fruit and all the remaining tea and mix well
Pour the mixture into your baking tin and pop in the centre of the oven
It should take around 1 hour, but keep an eye and remove once it is golden brown and a knife comes out clean
