Today I am handing the blog over to Mandy. Mandy is a mum of three from London. She blogs over at Sneaky Veg about her continued mission to feed her kids more fruit and veg. Today she is going to talk all about her Top 5 Cakes and Bakes with Unexpected Ingredients. I have in the past baked a beetroot cake and we loved it so I am really taken with her choices and may have to turn my hand to baking a few myself!

Hi, I’m Mandy from Sneaky Veg. As a mum on a mission to get my picky kids to eat more vegetables I’ve tried many different ways of using veg but even I am yet to bake a cake with cauliflower or aubergine!
Although I’m trying to limit the amount of times I hide vegetables in my kids’ food, as I want them to get used to seeing them on their plates, and hopefully one day eat them, I’m so tempted by all of these recipes. Five lovely ways to have a treat with the knowledge that there’s some goodness in there too.
