I’ve been experimenting in the kitchen again. I really do enjoy tweaking recipes to make them Slimming World friendly or to allow me to make them in the pressure cooker. Luckily my family also love the fact that I am happy to spend time in the kitchen working on new tasty recipes we can all enjoy, with the added benefit of them being healthy for us too! And this week I have been tinkering with a chicken and rice recipe that was luckily a big hit with everyone in the Two Hearts Household…and it is totally packed with green veggies to make it extra speedy if you’re following a Slimming World diet
This dish is a simple flavourful hearty recipe that will have you feeling full up and satisfied for hours. Plus as I use mostly frozen veggies it is also very nice on the food budget. Its slimming world friendly as it contains no syns, and is jam packed with a tonne of green vegetables to give it a great healthy speed boost…and helps you sneak some more veg into the kids while you’re at it. Its the perfect weekday evening dish for all the family to enjoy, that can easily be whipped up in under 30 minutes, in a pressure cooker or on the hob!
My recipe is intended for the pressure cooker or instant pot, but if you don’t have one don’t worry it can just as easily be made on the hob, just gently simmer the dish until all the water has been absorber, it might take a while longer than the pressure cooker does though!

WHY USE A PRESSURE COOKER FOR THIS CHICKEN AND RICE RECIPE
The pressure cooker I have is the Crock-Pot Express Pressure Cooker which is a 12-in-1 programmable multi cooker. Apart from multiple different pre-timed pressure cooker settings, there is also a slow cooker setting, steam setting, sauté setting, dessert, yogurt and keep warm setting. So this awesome little device really does earn its space in your kitchen. Ive yet to use the steam, dessert or yogurt setting, but should I ever want to try a recipe which requires that setting then I will be able to.
This has now replaced my slow cooker permanently. I only need the 1 appliance in my kitchen to serve both functions. Which is great as I already have a small kitchen, so less bulky appliances to store. Win/win!
If you are cooking joints of meat or tougher pieces of meat the main benefit is the low cook time (I can cook a whole large chicken in 25mins!) The high pressure allows you to drastically cut the time it takes to cook dishes. If you’re cooking a dish like this though, the cook time would be pretty similar to if you chose to cook it on the hob. But the main benefit for me is the fact I can set it to cook, and leave it for the time it takes. No need to be standing over your hob or having to keep stirring the dish. Once the timer is set you can walk away and get on with something else. This is a pretty big plus point for a parent as it helps save me time and makes everything way easier.
Slimming World Friendly Chicken and Rice with all the Greens

Ingredients you will need for this Chicken and Rice Dish
- 3 Chicken Breasts, diced
- 1 large leek, sliced
- 2 cups frozen diced cabbage
- 4 blocks frozen spinach
- 1 cup frozen peas
- 1.5 cups long grain rice
- 2 cups cold water
- 1 chicken stock cube
- 1tsp smoked paprika
- 1tsp lazy garlic
- 1tsp dried basil
- 1tsp dried oregano
- 1tsp onion powder
- fry light
How to make our Pressure Cooker Chicken and Rice Dish
- Mix together the paprika, basil, oregano and Onion Powder, add to the chicken and mix well to coat, set aside to marinade
- Spray your pressure cooker with fry light and set to sauté, add the leeks and fry until starting to soften 4-5 mins. Then add the lazy garlic and mix well, allow to sauté for another minute or 2
- Add the chicken to the pan and fry until it has browned all over.
- Stop the sauté setting. Add all the remaining ingredients to the pan and mix well (you may wish to crumble to stock cube in as it won’t break up easily on its own with cold water .
- Place the lid on the pressure cooker, close the vale and set to manual 5 minutes, high pressure.
- Once the timer is done allow the machine to natural release for 10 minutes, then carefully open the value to release any remaining pressure (be careful of the steam)
- Remove the lid and mix the contents well, making sure the spinach blocks have separated. All the water should have been absorbed and the rice should be perfectly cooked
- Your dish is ready to serve!

NOTE: If you would like it a little creamy, more risotto like, stir through a few tbsp of granted Parmesan…but remember to syn it if your on SW, or use one of your Healthy Extras
