Not to blow my own trumpet but don’t those flapjacks just look super tasty? And they were! In fact me and Jon wolfed the whole batch down pretty darn quickly! Sadly I can’t take all the credit for them, actually I can take very little as I simply made up a pre made mix by adding butter and honey and stuck it in the oven, but in my head I totally made them from scratch, lol!
It is Sweetpea Pantry who gets all the credit. Sweetpea Pantry create healthy superfood baking mixes for kids of all ages to enjoy making and eating. Ok so I don’t actually have kids yet, but I do love baking, so I was more than happy to test out 2 of their mixes when they offered to send me them. First up I tried the Super Oat Flapjack mix which is gluten free, packed full of wholegrains and Quinoa. Plus it can be made dairy free too if you use dairy free spread or coconut oil instead of the butter.
First of all the packets are great, very colourful and fun, I am sure kids would love them. Secondly the instructions are so simple to follow even if your not much of a baker. For these flapjacks you simply had to add melted butter and honey, give it a good mix and bake.
I ended up baking them for a little longer than the packet said as I found after the recommended time they were still a little too soft and hadn’t gotten nice and golden on top. But adding an extra 5-10 minutes and they were perfect. Letting them cool enough so I could cut them into squares was really hard as they smelt so good!
The flapjacks were delicious! Just the right side of sweet, but still nice and grainy and packed with sultanas and coconut. We loved them and I would happily make them again using the Sweetpea Pantry Super Oat Flapjack mix.
