A simple and delish slimming world chicken recipe that is quick to make, use cheap ingredients and enjoyed by all the family. Its packed with super free veggies to help keep you fuller for longer. Serve over rice or with slimming world chips!
Heat a frying pan on the hob with low cal cooking spray. Add your onion/leeks, pepper, baby corn and chicken and stir fry until the veg is starting to soften and the chicken is browned
Add the garlic, stir through and allow to fry for a minute of 2
Add the passata, tomato puree, coke, stock, soy, worcestershire sauce and mixed herbs, bring to the boil then reduce the heat to a simmer. Allow to simmer for 20-25 minutes until the liquid has reduced significantly and thickened into a sauce, stir it occasionally so it cant stick. (If the sauce still hasn't thickened raise the heat just a little for the last 5 minutes)
Serve over rice and enjoy!
