BBQ Sausage and Bean Casserole

A great simple family favourite that is easy to make in just 20 minutes. This tasty BBQ Sausage and Bean Casserole is a one pot wonder that all the family can enjoy. It's cheap to make, but filling and bursting with flavour. This recipe is for the pressure cooker, but you could easily pop it in the oven for around 40 minutes in a covered casserole dish.

Total Time 20 minutes mins
- 8 Pork Sausages each cut into 4
- 2 cloves of garlic crushed or 1 tsp lazy garlic
- 2 medium Carrots Sliced
- 2-3 large potatoes cubed, we leave skins on, but its up to you
- 2 x 400g tins Mixed Baked Beans
- 3/4 cup BBQ Sauce
- Dash of oil
Set your Pressure Cooker to Sauté, add a dash of oil and fry the sausages and garlic for 5 minutes until striating to brown.
Stop sauté setting, add all other ingredients to pot and stir well
Set pressure cooker to manual, high pressure for 15minutes and lock id in place
Make sure pressure valve is closed and start cooker
Once finished use quick release by opening valve
Give it a stir, serve in a bowl with some crusty bread and enjoy
Not a fan of Sausages? Replace them with chicken breast for a tasty chicken and bean casserole instead
If you cant find mixed beans, regular baked beans will work too
Don't have a Pressure Cooker? Brown your sausages in a pan on the hob, then pop it all in a casserole dish and put in the oven for around 40minutes
