Banana and Chocolate Chip Muffin Recipe
This is a super simple recipe for really tasty Banana and Chocolate Chip Muffins. It uses Carob Fruit Syrup and the banana instead of any sugar. Just throw all the ingredients together and go, perfect for lazy weekend or morning baking. These are a perfect breakfast muffin to start your day.

- 1 Large ripe banana
- 150 g Plain white flour
- 50 g Chocolate chips
- 1 tsp Bicarbonate of soda
- 100 ml Sunflower oil or other oil will work
- 75 ml Carob fruit syrup
- 75 ml Milk
- 1 tsp Vanilla extract
Preheat Oven to 180-200C
Pop 8 muffin/large cupcake cases in a deep muffin tin
Mash the banana
Mix with the chocolate chips
Mix in all the other ingredients into all combined and no lumps of flour (I used a mixer but can easily be done by hand)
Split evenly between the 8 muffin cases and pop in the oven for 20 minutes
Keep an eye on it for the last few minutes just in case the cook a little fast
The muffins should rise a little and go a light golden brown on top
Remove from oven when cooked, pop on a cooling rack for a few minutes to coo (if you can wait that long!)
