Slimming World Minced Beef Hash Recipe

This is a super simple and really tasty meal, that can help you pack in some free and super free foods. Hearty and homely this recipe can help you use up some of that forgotten veg in your fridge at the end of the week. Its a family favourite here!

Ingredients
  

  • 1 Large Onion - diced
  • 400 g Extra Lean Beef Mince
  • 1 tin Heinz BBQ Beans
  • 2 Garlic cloves - peeled and diced
  • 1 tsp Ground Cumin
  • 1 Large Carrot - peeled and diced
  • 150 g Potatoes - peeled and diced
  • 150 g Sweet Potato - peeled and diced
  • 1 Large Leek - sliced
  • 1 tin Chopped Tomatoes
  • 1 tsp Mixed Herbs
  • Frylight or other low calorie cooking spray

Instructions
 

  • Heat the cooking spray in a large deep pan, add onions and fry for 2-3 minutes
  • Add the garlic and cumin to the pan, stirring them into the onions to release the flavour
  • Add the minced beef and cook on high, making sure to stir it and break up the lumps as you go. It should take around 5 minutes to brown
  • Add all the remaining ingredients, bring to the boil then reduce heat to a simmer and cook covered for around 15 minutes. Stir occasionally incase the liquid dries up a little faster.
  • When the liquid has reduced it is ready to serve.
  • Season with salt and pepper if needed, but we found the BBQ beans and spices were enough
  • Serve with with a corn on the cob or a crispy roll and enjoy

Notes

If you've got other veggies left in the fridge why not try adding them, celery or peppers would work great
Try the chilli beans instead of the BBQ ones (just remember to check if they are synned)
If you fancy a bit of a kick add a diced chilli with the garlic and cumin
