Fruity Pineapple Chicken Recipe

Introducing our delightful Pineapple Chicken recipe perfect for a quick weeknight dinner! This dish is an absolute favorite of ours. Tender chicken cubes and veggies in a fruity and savory sauce, cooked to perfection in the Instant Pot in under 15 minutes. It's like having a taste of Hawaii right in your own kitchen!

Ingredients
  

  • 600 g of chicken breasts diced
  • 1 cup pineapple juice plus 2tbsp for cornflour mix
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup ketchup
  • 1 tbsp sugar
  • 2 teaspoons grated ginger or Lazy Ginger
  • 2 cloves of garlic grated (or 2stp Lazy Garlic)
  • 2 Peppers diced (any colour will do)
  • 100 g Fine Green Beans (trimmed and cut in 3)
  • 2 teaspoons sesame oil
  • 2 teaspoons English Mustard mustard
  • 2 tablespoons White wine or Cider vinegar
  • 1 cup of pineapple chunks
  • 2 tsp Cornflour Heaped
  • Rice to serve

Equipment

  • 1 Pressure Cooker

Method
 

  1. Lets get cooking! Add all the ingredients to the Pressure Cooker except for the pineapple chunks, the extra juice and the cornflour. Give it all a good stir to combine and coat the chicken in veg in all the tasty sauce ingredients
  2. Pop the lid on, and turn the valve to closed. Set the pressure cooker to manual, high pressure, 6 minutes
  3. Once cooking time is over, do a quick release. Mix the remaining juice and the cornflour. Remove the lid and add the pineapple chunks and cornflour mix. Set the machine to sauté and allow to simmer for around 5 minutes until the sauce starts to thicken.
  4. Serve your delicious Pressure Cooker Pineapple Chicken over rice
