Method
- Spray a large frying pan with cooking spray and place over a high heat. Add your chicken breasts and fry until cooked through (we found it easiest to butterfly the breasts to help them cook through.
- Once cooked remove from the heat and using 2 forks shred in a large bowl and set aside
- Take your wholemeal wrap and layer your ingredients in this order on one half of your wrap: cheese, courgette, chicken, sweetcorn, salsa and more cheese. Fold the wrap in half so the edges meet
- Spray your pan again and add your quesadilla, fry over high heat on one side until browned, then flip and cook on the other side, your cheese should be melted.
- Transfere to a chopping board and cut into 3 slices, serve with your side salad and enjoy!
