Moroccan Meatballs and Couscous

A great mix of sweet and savoury moroccan flavours bring together this simple meal of beef meatballs and fruity couscous. A great recipe for all the family to enjoy.

Ingredients
  

  • 20 x 20g Muscle Food Lean Beef Meatballs
  • 1/2 Onion chopped
  • 3 Garlic Cloves finely chopped or 1tsp lazy garlic
  • 1 Red Onion chopped
  • 400 g Tomatoes finely chopped
  • pinch of fresh parsley
  • 1 tsp Cumin Seeds
  • 2 tsp sweetness
  • 3 Springs Coriander chopped
  • 6 Mint Leaves chopped
  • 300 g Couscous
  • 1 Spring Onions finely chopped
  • 1 Sweet Pepper chopped
  • Handful of Dried Cranberries
  • 150 g Fresh Kale

Method
 

  1. Spray a large frying pan with low cal spray and place over a medium heat. Once hot add your onions and garlic and fry for 5 minutes until starting to brown
  2. Add your meatballs and cook until browned all over, keep stirring
  3. Add your chopped tomatoes, parsley, cumin seed, sweetener, coriander and mint, mix well, reduce heat and allow to simmer for 15 minutes
  4. Cook your couscous according to packet, then add your spring onions, red onion, sweet pepper and dried cranberries
  5. Saute your kale in a separate pan for a few minutes with a pinch of salt.
  6. Plate up with your kale topped with couscous and finish with your meatballs and tomato sauce and enjoy!
