Equipment

  • 1 Pressure Cooker

Ingredients
  

  • 600 g Chicken Breast diced
  • 1.5 cups your favourite BBQ Sauce
  • 1/2 cup Water
  • 1/2 cup Pineapple Juice plus 2tbsp for cornflour mix
  • 1 cup crushed Pineapple if you can't find crushed then mash tinned pineapple with a fork
  • 2 diced Peppers
  • 160 g tinned sweetcorn
  • 2 header tsp Cornflour
  • Rice to Serve

Instructions
 

  • Lets get cooking! Add all the ingredients to the Pressure Cooker except for the extra juice and the cornflour. Give it all a good stir to combine and coat the chicken in veg in all the tasty sauce ingredients
  • Pop the lid on, and turn the valve to closed. Set the pressure cooker to manual, high pressure, 6 minutes
  • Once cooking time is over, do a quick release. Mix the remaining juice and the cornflour. Remove the lid and add the cornflour mix. Set the machine to sauté and allow to simmer for around 5 minutes until the sauce starts to thicken.
  • Serve your delicious Pressure Cooker BBQ Hawaiian Chicken over rice
