Rocky Road Recipe

A tasty rocky road treat jam packed with Shortbread Biscuits, Marshmallows, Fru Snax, cranberries and seeds!

Ingredients
  

  • 500 g Milk Chocolate
  • 8-10 Biscuits we used the Walkers cookies, and a few digestives
  • 100 g Mini Marshmallows plus some top decorate the top
  • 2 packs Fru Snax we used the strawberry ones
  • 100 g trail mix

Method
 

  1. Melt the chocolate either over hot water in a bowl, or in the microwave on low temperature. I use the microwave on 350w power and stop every minute or so to stir, until the chocolate is completely melted.
  2. Place the biscuits in a sealable sandwich bag, remove air and seal bag (or you'll make a mess) use a rolling pin/your hands/a wine bottle to gently crush the biscuits into smaller chunks and crumbs
  3. Pour the biscuits into the chocolate and mix well
  4. Add the Fru Snax, Trail Mix and most of the marshmallows and mix till combined
  5. Line a baking tin with greaseproof paper or use a silicon cake mould (easier to get it out!)
  6. Pour the mixture in to the tin and spread out evenly, it will be quite sticky and lumpy so you will need to push it down into the edges
  7. Pop in the fridge for a few hours, or overnight to set.
  8. Turn it out, cut into cubes and enjoy!
