Method
- Spray a large non stick frying pan with low calorie cooking spray and place over a high heat, add you chicken fillets and cook for 12-15 minutes until cooked through
- Once cooked set aside on a plate to rest, before cutting into strips
- In a bowl mix together the Dark Soy, Orange Juice, Plum Sauce and Red Wine Vinegar to create your sauce
- Spray more low calorie spray into your pan and place over a high heat, add you onion and peppers and cook for 5 minutes until softened
- Return your chicken to the pan and add your sauce, mix well to coat and allow to cook for a few minutes until the sauce has reduced and thickened, spoon over your chicken as its cooking.
- Cook your noodles according to the packet
- Once your noodles are done and the sauce has thickened (10 minutes or so) top your noddles with the chicken and sauce and enjoy
