WHY USE A PRESSURE COOKER OR INSTANT POT FOR THIS BBQ HAWAIIAN CHICKEN RECIPE
It’s a one pot dish! Everything gets cooked in the Instant Pot, which means less time spent on washing up.
What I really love is how easy this recipe is. Just throw in all the ingredients, set the timer, and let it work its magic. It takes care of everything, except for the final finishing touches.

Not only does the pressure cooker speed up the cooking process, but it also ensures that the chicken turns out moist, tender, and oh-so-flavorful. It’s the secret to making incredibly tasty dishes!
CAN I MAKE THIS WITHOUT AN INSTANT POT OR PRESSURE COOKER
No Instant Pot or pressure cooker? No worries! You can still make this recipe on your hob or in your slow cooker. Keep in mind it will take longer without the convenience of setting and leaving.
For the slow cooker method, combine all ingredients (except the extra pineapple juice and the cornflour) in the dish. Cook on high for 4 hours or low for 6-7 hours. Mix the remaining pineapple juice and cornflour then add this to the pot 10 minutes before it’s done. Enjoy tender, flavourful BBQ Hawaiian chicken. If sauce needs further thickening, simmer on the hob for a few minutes.
On the hob, brown chicken, fry veggies briefly, then add remaining ingredients (except pineapple and cornflour). Simmer gently for 20-30 minutes, then create the pineapple juice and cornflour mix and add it to the pan, simmer for 10-15 minutes to thicken sauce.

WHAT TO SERVE WITH BBQ HAWAIIAN CHICKEN
We love this BBQ Hawaiian Chicken served over rice. It absorbs all the smokey fruity sauce and makes for a super tasty and filling dish. I use packet microwave rice to save myself time, and I find it easy to portion control so we tend not to have any left over.
If your not keen on rice, this dish works awesomely over pasta, with mashed potatoes, served with new potatoes and a big salad or even on a jacket potato for a fruity flavourful lunch time treat.

BBQ HAWAIIAN CHICKEN INGREDIENTS
- 600g Chicken Breast, diced
- 1.5cups your favourite BBQ Sauce
- 1/2 cup Water
- 1/2 cup Pineapple Juice (plus 2tbsp for cornflour mix)
- 1 cup crushed Pineapple (if you can’t find crushed then mash tinned pineapple with a fork)
- 2 diced Peppers
- 160g tinned sweetcorn
- 2 header tsp Cornflour
- Rice to Serve
HOW TO MAKE INSTANT POT BBW HAWAIIAN CHICKEN
1. Lets get cooking! Add all the ingredients to the Pressure Cooker except for the extra juice and the cornflour. Give it all a good stir to combine and coat the chicken in veg in all the tasty sauce ingredients
2. Pop the lid on, and turn the valve to closed. Set the pressure cooker to manual, high pressure, 6 minutes
3. Once cooking time is over, do a quick release. Mix the remaining juice and the cornflour. Remove the lid and add the cornflour mix. Set the machine to sauté and allow to simmer for around 5 minutes until the sauce starts to thicken.
4. Serve your delicious Pressure Cooker BBQ Hawaiian Chicken over rice
