I absolutely adore my Crock-Pot Express Pressure Cooker! Let me tell you, it’s a true kitchen superstar with its incredible versatility as a 12-in-1 programmable multi cooker. I can’t help but be amazed by all the features it offers.
Not only does this fantastic appliance come with a range of pre-timed pressure cooker settings, but it also boasts a slow cooker setting, steam setting, sauté setting, and even dessert, yogurt, and keep warm settings. It’s like having a whole collection of cooking tools in one compact device!
Although I haven’t had the chance to try out the steam, dessert, or yogurt settings just yet, I’m eagerly looking forward to experimenting with new recipes that make use of those features. It’s exciting to think about all the delicious possibilities that await me in the future.
One of the best things about this marvelous gadget is that it has completely replaced my slow cooker. Now, I only need this one appliance in my kitchen to handle both functions. WHY USE A PRESSURE COOKER OR INSTANT POT FOR THIS PINEAPPLE CHICKEN RECIPE
It’s a one-pot wonder! Everything gets cooked in it the pressure cooker, which means less time spent on washing up.
What I really love is how easy it is to use. Just throw in all the ingredients, set the timer, and let it work its magic. It takes care of everything, except for the final finishing touches.
One of the best things about the pressure cooker is how quickly it cooks the entire recipe, from start to finish in less than 20 minutes. Talk about a time-saver!
Not only does the pressure cooker speed up the cooking process, but it also ensures that the chicken turns out moist, tender, and oh-so-flavorful. It’s the secret to making incredibly tasty dishes!
CAN I MAKE THIS WITHOUT AN INSTANT POT OR PRESSURE COOKER
No Instant Pot or pressure cooker? No problem! You can still make this recipe on your hob or in your slow cooker. Just keep in mind that it will take a bit longer, and if you cook on the hob you won’t have the convenience of setting and leaving like you would with a pressure cooker or slow cooker.
For the slow cooker method, simply combine all the ingredients (except the pineapple chunks and cornflour) in the dish. Set it to high for 4 hours or low for 6-7 hours. Add the pineapple chunks and cornflour mixture 10 minutes before it’s done. You’ll still end up with a tender and flavourful fruity pineapple chicken dish. If you find that the sauce needs thickening further, you can transfer it to the hob for a few minutes to simmer and thicken.
On the hob, start by browning the chicken and gently frying the vegetables for a few minutes. Then, add the rest of the ingredients (except the pineapple chunks and cornflour). Allow the dish to simmer gently for 20-30 minutes before adding the remaining ingredients and simmering for an additional 10-15 minutes to thicken the sauce.
PINEAPPLE CHICKEN INGREDIENTS
- 600g of chicken breasts, diced
- 1 cup pineapple juice (plus 2tbsp)
- 1/2 cup low-sodium soy sauce
- 1/2 cup ketchup
- 1tbsp sugar
- 2 teaspoons grated ginger (or Lazy Ginger)
- 2 cloves of garlic, grated (or 2stp Lazy Garlic)
- 2 Peppers, diced (any colour will do)
- 100g Fine Green Beans, (trimmed and cut in 3)
- 2 teaspoons sesame oil
- 2 teaspoons English Mustard mustard
- 2 tablespoons White wine or Cider vinegar
- 1 cup of pineapple chunks
- 2 heaped tsp cornflour
- Rice to serve
HOW TO MAKE INSTANT POT PINEAPPLE CHICKEN
1. Lets get cooking! Add all the ingredients to the Pressure Cooker except for the pineapple chunks, the extra juice and the cornflour. Give it all a good stir to combine and coat the chicken in veg in all the tasty sauce ingredients
2. Pop the lid on, and turn the valve to closed. Set the pressure cooker to manual, high pressure, 6 minutes
3. Once cooking time is over, do a quick release. Mix the remaining juice and the cornflour. Remove the lid and add the pineapple chunks and cornflour mix. Set the machine to sauté and allow to simmer for around 5 minutes until the sauce starts to thicken.
4. Serve your delicious Pressure Cooker Pineapple Chicken over rice

WHAT TO SERVE WITH PINEAPPLE CHICKEN
We love this Pineapple Chicken served over rice. It absorbes all the fruity sauce and makes for a super tasty and filling dish. I use packet microwave rice to save myself time, and I find it easy to portion control so we tend not to have any left over.
If your not keen on rice this dish works awesomely over noodles, or even on a jacket potato for a fruity flavourful lunch time treat.

- 1 Pressure Cooker
