Although I love the winter and the prospect of just a little bit of snow in South Wales, I still dream of a nice warm sunny holiday somewhere else in the world at this time of year. I get just a little jealous when our brides and grooms are jetting off to sunnier climates on the honeymoon after we photograph their weddings in November and December.
So when Thomas Cook Airlines asked me to come up with a BBQ recipe inspired by all things warm and sunny and a country found on their hottest destinations guide I thought it would be a great way to bring that holiday food feeling to our home. I chose to base my recipe on the Caribbean! As it is somewhere I would love to visit and I knew exactly what kind of BBQ recipe I wanted to make. A BBQ Banana Recipe!
Here is a great recipe for some seriously tasty, and a little bit naughty, Rum and Maple Glazed BBQ Bananas. This is the perfect dessert recipe for the adults (just omit the rum and it’s great for the kids too) They taste amazing if cooked on the BBQ but if the weather doesn’t permit they are equally as good cooked in the oven too!
Rum and Maple Glazed BBQ Banana Recipe
Ingredients
- 2 large banana's unpeeled
- 1 tbsp of your favourite White Rum
- 2 tbsp Maple Syrup
- 1 tbsp Soft Brown Sugar
- 25 g Butter
- Your Favourite Ice-cream to serve
- You wil also need - foil and grease proof paper
Instructions
- Pop the butter in a microwave safe bowl and pop in the microwave for about 20 seconds or until melted
- Mix in the rum, maple syrup and sugar
- Place the bananas on the greaseproof paper on top of the foil
- Slice the bananas along the curve but not all the way through, ease them open a little to create a pocket
- Pour all the rum/syrup mix into the bananas
- Fold the foil tightly around the bananas and roll at top to create a little parcel
- Place on the BBQ for 15-20 minutes or in an oven at 180 for 25 minutes
- Once cooked they should be soft and sticky! Serve half a banana each, drizzled with any remaining liquid and topped with a spoon of your favourite ice cream, Jon fancies Eton Mess on his!
