My first week on plan went really well and I have made some really delicious recipes which all the family have enjoyed. I also managed to drop an awesome 5.5lbs in my first week, and a further 3.5lbs in my second! whoop! 9lbs gone so far! I feel like I am getting back into the groove of things with the whole SW way of eating, and I am loving the new app and scanner as it makes checking and tracking syn values so much easier!!
My Slimming World Creamy Chicken and Chickpeas
Now when you think of rich creamy dishes you usually assume they are going to be high in calories….and therefore high in syns if you are on Slimming World. So finding a great low syn or Syn Free creamy chicken recipe doesn’t happen often…but I promise you this creamy slimming world chicken recipe is just delicious! And it is syn free as we are using Primula Light as a Healthy Extra A choice.

Slimming World Chicken Recipes
Chicken recipes are usually my go to when I am meal planning for my evening meals, its such a versatile meat and I know all the family will eat it…plus it kinda goes with every kind of sauce and vegetable! And it is more friendly on the old bank balance too, especially when you can buy large packs of chicken breast and split them for a number of meals. What I found whilst on Gousto (Get 60% off your first box and 30% off the res of month using this link) and Hello Fresh (Get £20 off with this link) meals is that we can actually make do with less meat in a dish that I have always cooked in the past, especially if you bulk out your recipe with vegetables or pulses, like the chickpeas in this dish. Not only does this lower our weekly food budget but it is also much healthier for us and I am actively packing extra speedy veg into my meals…so its a win win!
Slimming World Creamy Chicken and Chickpeas Recipe
This stunning creamy chicken and chickpeas recipe is the perfect dish if you are looking for a hearty filling family meal on a budget. It is really simple to make and can be done in under 30 minutes, perfect if your a busy mum like me. And whats even better is that it is completely Syn Free! Score!
This recipe serves 4
Ingredients
- 400g chicken breast, diced to small bite sized pieces
- 400g tin of chickpeas, drained
- 1 large leek, diced
- 1 tube light primula cheese (Healthy Extra A)
- 400ml Chicken stock
- 1tsp lazy garlic or 1 clove garlic, peeled and diced
- 1tbsp Worcestershire Sauce
- 1tsp White Wine Vinegar
- 1/2tsp Mustard Powder
- 1tsp Smoked Paprika
- Frylight or spray oil
- Salt and pepper
How to make Creamy Chicken and Chickpeas
- Spray a frying pan with fry light or spray oil and place on a medium heat. Add your chicken and cook till browned all over. Then remove from the pan and set aside
- Add the Worcestershire sauce, vinegar and a splash of water to the pan and use it to deglaze the pan. Scrap all the brown bits form the bottom of the pan and heat until the majority of the liquid has evaporated.
- Respray the pan with your oil then add the leeks, gently fry for 3 or 4 minutes until starting to soften
- Add the garlic to the pan and fry for another minute or 2
- Add the mustard powder and stir to coat everything then add your stock
- Bring to the boil, then lower heat and allow it to simmer until the liquid has reduced by half
- Add the primula cheese and mix in well until it is all combined
- Add the smoked paprika and mix it into the creamy sauce
- Return the chicken to the pan and stir well to coat, increase heat to medium and simmer for 5 minutes. Stir frequently so it doesn’t catch on the edges of the pan
- Add the chickpeas to the pan and continue to cook for another 5-10 minuets until the chicken is cooked and the sauce has thickened
- Serve over rice and with your 1/3 side of speed veg
- Enjoy!
