Week 1 is going really well, yes I’m only 3 days in, but I’ve gotten back into the swing of it quickly and feel motivated at the moment. I’ve started looking for recipes again and last night adapted a Chinese Chicken recipe to make a great tasty Slimming World Chinese Fakeaway. This Honey Soy Chicken Noodle dish is tasty, really filling and pretty cheap to make too. Both the kids enjoyed it too. I added a pile of baby corn to my plate for my 1/3 speed, but I also loaded up the meal with green beans and red peppers so I was getting in lots of the good stuff. It would work really well with pak choi or some soy glazed broccoli too!
Week 1 Challenges!
The hardest things so far for me have been skipping my nightly digestive biscuits with my cuppa once Elian is in bed. Its become a ritual for me and Jon the last few months, cuppa and quite a few digestives, but at 3 syns each I can see why I’ve gained so much weight, haha! And resisting finishing off the last 1/4 of Effie’s birthday cake which we have left over from the weekend. Its a 6 tiered, rainbow master piece from a local baker, layered up with tonnes of buttercream, with white chocolate dripping from the top and is probably 1000 syns a slice!
This week I also made a seriously tasty and very filling Syn Free Mexican Chicken and Black Bean Stew so don’t forget to check that out too!
I am not a Slimming World consultant! I am simply a member who likes to cook, and adapted recipes to make them Slimming World friendly or low syn/syn free where I can. So as always please check the ingredients against current syn values as they change often and I would hate to be responsible for someones weight loss journey slowing down. That being said this particular recipe is made using fairly basic ingredients which are all syn free apart from the honey which should be 1 syn per portion and should stay that way. If you are a member you can double check ingredients on the website

Slimming World Fakeaway Recipes!
Who doesn’t love a takeaway!! And honestly it is one of the hardest things to give up when you go on a diet. Thats why Slimming World coined the term Fakeaway…like a takeaway but way healthier and home cooked. Chinese takeaway is my favourite! I love Sweet and Sour Chicken, Lemon Chicken, Crispy Beef, Noodle Dishes and a good old Pancake Roll! But we all know they aren’t great for us diet wise! And honestly I have tasted some awesome Fakeaway recipes over the years, sometimes which are even tastier than a proper takeaway.

Ingredients
- 4 Egg noodle nests
- 600g Chicken breast, diced

- 3tbsp Dark Soy Sauce

How to make Honey Soy Chicken Noodles
- Bring a pot of water to boil and add the noodles. Cook as per the instructions on the packet, usually around 5 minutes. Then drain, run cold water through them so they don’t stick and set them aside
- Meanwhile in a large frying pan spray some frylight (or your choice of spray oil) and add the diced chicken. Fry for a few minutes until browned all over.
- Add the pepper and green beans and continue to fry, stirring frequently, until the peppers and beans have softened and the chicken pieces are cooked through. Around 6-8 minutes
- Mix together the soy, honey, garlic (and sesame seed if using them) and add to the chicken and veg, lowering the heat so it doesn’t boil. Stir fry for 1-2 minutes to coat the chicken and veg with the sauce
- Add your noodles to the pan and mix well so everything is combined and heat until noodles are hot. If it seems a little dry you can add a splash of water
- Serve with your 1/3 of a place of speed vegetables
- Enjoy!
