.We decided to re-cook the Slimming World Diet Coke Chicken recipe last week after having not cooked it for probably 2 years, and had forgotten just how tasty it really is, and how easy it is to cook. I promise you will love it, even if you don’t like coke! The chicken is just the right side of sweet and savoury, and with plenty of Super Free veggies, and even better it is totally syn free on Extra Easy! So lets get into the recipe
Ingredients
- 4 Chicken breasts, diced into bitesize pieces
- 2 peppers, deseeded and diced
- 1 onions (or a leek), diced
- 130g babycorn, cut into 3 pieces
- 330ml can of diet coke
- 200ml chicken or veg stock
- 8tbsp Passata
- 4tbsp Tomato Puree
- 2 Garlic cloves, finely chopped
- 2tsp Worcestershire Sauce
- 1tbsp Dark Soy
- 1tsp Mixed Herbs
- Low Cal Cooking Spray
How to make Slimming World Diet Coke Chicken
- Heat a frying pan on the hob with low cal cooking spray. Add your onion/leeks, pepper, baby corn and chicken and stir fry until the veg is starting to soften and the chicken is browned
- Add the garlic, stir through and allow to fry for a minute of 2
- Stir in the passata, tomato puree, coke, stock, soy, worcestershire sauce and mixed herbs, bring to the boil then reduce the heat to a simmer. Allow to simmer for 20-25 minutes until the liquid has reduced significantly and thickened into a sauce, stir it occasionally so it cant stick. (If the sauce still hasn’t thickened raise the heat just a little for the last 5 minutes)
- Serve over rice and enjoy!
See I told you that was super simple and I promise it is super tasty too. All the family enjoy it in this house. If you fancy a change this would work with pork. Plus you can easily change up the veg for what you have in stock at home!

This was delicious! We eat spicy food in our house so we added a tablespoon of chilli flakes in with the garlic. Will be definitely having again!
