So last week we got properly stuck into Slimming World again as I am finally ready to try shift the Baby+ weight as I like to call it. We’ve been testing out lots of recipes to see what we like and what is easy/quick to make, so I thought I would run a week of SW recipes for all those SW members out there. So expect lots of fun recipes over the coming week (sorry to all my non-SW readers, normal family and baby posting will resume soon! Plus these are tasty recipes every if your not following Slimming World!)
We picked up 3 half gammon joints on offer in Tesco last week which I knew would be great for Slimming World meals over the next few weeks, then spent 2 days looking for recipes I could use that would be easy and realised there actually isn’t a huge amount of slimming world gammon recipes out there! Boo! But I remembered we tried the sticky 5-spice gammon when we were on Slimming World a few years ago so dug out the recipe for that but thought we would try popping it in the slow cooker to see if it would work in there. I am so busy with the dude and work at the moment that cooking time is at a premium, that is why I love my slow cooker so much!
We are currently working on finding out which recipes work in the slow cooker, or can be adapted to work in the slow cooker so I can do a batch of freezer cooking in a few weeks to make things even easier on us when wedding season properly kicks off in a few weeks and both me and Jon are super busy and knackered. I think planning and prepping is one of the major keys to keeping on plan with SW. For us if we don’t plan meals and have syn free or low syn snacks to hand at home then we will instead reach for something that isn’t so good for us, or revert to convenience meals to save me time and the effort of cooking. That being said I haven’t been planning what we would eat for the whole week, but instead been taking each day at a time and planning the day before so I have fresh veg and dont end up wasting anything, as I think this was another issue when on SW last time. Now I look to see what we have and plan meals around that.
I think the Slimming World Chinese 5-spice Gammon recipe worked well in the slow cooker. It didn’t end up sticky like it did in the pan but it still tasted great! We served it with boiled rice and a big veggie stir fry to get in our super free and it’s just 1 syn per person!
Slimming World Slow Cooked Chinese 5-Spice Gammon
Ingredients
- 2 tsp Chinese 5-spice powder
- 4 gammon steaks or a6500-700g Gammon Joint if using a joint soak in water for a few hours
- Finely grated zest and juice of 1 orange
- 1 level tbsp clear honey
- 100 ml chicken stock
- 2 tbsp dark soy sauce
Instructions
- Remove all the excess fat from the gammon and dice into chunks or strips
- Place in the slow cooker and sprinkle with the Chinese 5-Spice, give it a good mix
- Mix all the other ingredients in a jug or bowl then pour over the meat
- Cook on High for 4 hours or Low for 8-10
- Serve with noodles or rice and some stir fried veggies
