Eating healthy is just as important for your pet as it is for you! So finding food they love whilst still being nutritious and good for them is really important. Pet’s at Home recently got in touch with us to ask if we would be interested in their new Wainwright’s Dog Food Eat Healthy campaign and of course Opie said yes straight away as getting any new food or treats is a priority for him! Hehe!
So Wainwright’s wants to highlight how their food is healthy by having us humans come up with recipes using their main ingredients. I’m always up for a bit of a cooking challenge so was happy to try this one out. We received the Wainwright’s Turkey and Rice food so of course my first thought was risotto and I set to working on a prefect tasty recipe for us.
Turkey and Cranberry Risotto Recipe
Ingredients
- 1 liter chicken stock or vegetable as appropriate
- 1 tablespoon olive oil
- 3 turkey breasts or fillets cubed
- 4 shallots finely chopped
- 2 garlic cloves finely chopped (or 1tsp lazy garlic!)
- 400 g risotto rice
- 100 ml dry white wine
- 70 g butter
- 150 g freshly grated parmesan cheese
- 100 g dried cranberries
Instructions
- In a deep pan heat the oil over a medium to high heat. Once heated add the shallots and garlic and fry for 2-3 minutes.
- Add the turkey breast and cook till browned.
- Next add the rice. It is very important not to leave the pan unattended at this point and to continuously stir the rice so it starts to absorb all the flavours but doesn't brown. It should begin to look translucent after 2-3 minutes
- Pour in the white wine, but keep stirring! After a few minutes the rice should have absorbed most of the liquid.
- This is when you can start adding the stock, around 200ml's at a time. Turn the heat down to a simmer so the liquid has time to be absorbed and doesn't boil off, stirring frequently so the rice doesn't catch.
- As each portion of liquid is absorbed add another portion until it is all gone. Hopefully you rice is perfectly cooked at this point (if it is still a little too al-dente for your taste then add 200mls of boiling water or more stock until you are happy)
- Remove the pan from the heat and stir in the knob of butter and half the parmesan
- Plate up the risotto and top with a sprinkling of cranberries and the last of the parmesan
- Enjoy!
So there you have my Turkey and Cranberry Risotto recipe (assuming your not sick of turkey after christmas!) that is both simple and healthy to make. Both me and Jon really enjoyed the risotto and found it really filling! Opie on the other hand got to try the Wainwright’s Turkey and Rice dried food for puppies, and he can be a little fussy with his dried food (much prefers meat, but we give him 50/50) but he seemed to like this lots and ate it all up when it was in his bowl. He has been eating mixed with his meaties for a few weeks and seems to really enjoy it. The puppy food is gentle on a dogs digestion and is free from many of the ingredients which dogs can be allergic to, including grain which a number of foods contain to bulk them out.
