Peanut Butter and Banana Muffin Recipe - Baby Led Weaning Breakfast Idea

This is a great simple recipe for the perfect Baby Led Weaning Breakfast Muffin. Banana and Peanut Butter Muffins are a perfect start to the day for your little one, especially if your tight on time in the mornings.

Total Time 25 minutes

Ingredients
  

  • 125 g Self-Raising Flour
  • 0.5 tsp Baking Powder
  • 15 g Oats
  • 1 Medium Ripe Banana - Mashed
  • 75 g Smooth Peanut Butter we used Coconut and Peanut Butter
  • 1 Egg
  • 15 g Melted Butter just pop it in the microwave for around 1 minute
  • 100 ml Milk

Instructions
 

  • Pre-heat your oven to 180C (350F, Gas Mark 4)
  • Place 12 cupcake cases in a cupcake tin
  • Whisk the egg to break up the yoke
  • Add the mashed banana, peanut butter, oats, milk and melted butter and mix well (it won't make a smooth combined mixture but should be mixed together)
  • Gradually sieve in the flour and baking powder, stirring as you go until it is all combined
  • Spoon the mixture evenly into the 12 cases
  • Pop in the oven for 15-20 minutes (you want them light in colour so they are still soft)
  • Remove from oven and place on a wire rack to cool
  • Serve for breakfasts, dessert or a snack and enjoy! (Elian likes them with a dollop of yogurt to make them even softer)

Notes

If you want them as a sweet treat try adding a few chocolate chips or some crushed raspberries
We used Meridian Coconut and Peanut Butter as I happened to have it, but you can use any smooth peanut butter
