Baby Led Weaning Breakfast Ideas – Banana and Peanut Butter Muffin Recipe

Baby Led Weaning Breakfast Ideas

Can you believe Elian is 7 months old already, time seriously flies when you become a parent! So for the last month we have been testing the waters of baby-led weaning, no doubt you’ll have seen his messy face on our Instagram or Facebook Page, or you might have caught little dude tasting some of his first foods over on our YouTube channel! I’m not going to explain baby-led weaning as the link above will do it far better, but it pretty much means you don’t give babies pureed food, instead you give them soft finger foods to start with and progress upwards onto normal foods as they begin to develop chewing, teeth and hand/eye coordination.

So far he has tried out a whole host of foods from banana and raspberries, to broccoli, melon, pasta and scrambled eggs, and I can hand on heart say he has happily eaten and enjoyed everything. The only issue I now have is trying to come up with new things for him to try so he doesn’t get bored of eating the same thing everyday! He currently only has breakfast and tea (just small portions as he is still breastfeeding) but I have now started to look for actual recipes for him, rather than just giving him fruit and cooked veg. Baby led weaning breakfast ideasI decided to try introducing peanuts into his diet after reading a rather logical article about peanut allergies, which in short explained that by introducing small amounts frequently from a young age they are actually less likely to have an allergic reaction as their bodies learn how to process peanuts. Just like vaccines give you a small dose of the illness so your body can learn to fight it, its the same logic with peanuts and other foods which people are more commonly allergic too. Obviously if either parent has a history of peanut allergies this isn’t recommended unless you talk to a doctor or Health Visitor first! I used the Meridian Coconut and Peanut Butter as I know it doesn’t have palm oil in it, or other additives and its the one I happened to have in the cupboard! baby led weaning breakfast ideas - Banana muffin recipe

As you can see the little monster really enjoyed his first taste of the muffins, I gave one to him, broken in half with a dollop of yogurt on his tray so he could smoosh it up a bit and make it softer. Peanut Butter and Banana Muffin Recipe - Baby Led Weaning Breakfast Idea

This is a great simple recipe for the perfect Baby Led Weaning Breakfast Muffin. Banana and Peanut Butter Muffins are a perfect start to the day for your little one, especially if your tight on time in the mornings.

Ingredients Method Notes

Ingredients
  

  • 125 g Self-Raising Flour
  • 0.5 tsp Baking Powder
  • 15 g Oats
  • 1 Medium Ripe Banana - Mashed
  • 75 g Smooth Peanut Butter we used Coconut and Peanut Butter
  • 1 Egg
  • 15 g Melted Butter just pop it in the microwave for around 1 minute
  • 100 ml Milk

Method
 

  1. Pre-heat your oven to 180C (350F, Gas Mark 4)
  2. Place 12 cupcake cases in a cupcake tin
  3. Whisk the egg to break up the yoke
  4. Add the mashed banana, peanut butter, oats, milk and melted butter and mix well (it won't make a smooth combined mixture but should be mixed together)
  5. Gradually sieve in the flour and baking powder, stirring as you go until it is all combined
  6. Spoon the mixture evenly into the 12 cases
  7. Pop in the oven for 15-20 minutes (you want them light in colour so they are still soft)
  8. Remove from oven and place on a wire rack to cool
  9. Serve for breakfasts, dessert or a snack and enjoy! (Elian likes them with a dollop of yogurt to make them even softer)

Notes

If you want them as a sweet treat try adding a few chocolate chips or some crushed raspberries
We used Meridian Coconut and Peanut Butter as I happened to have it, but you can use any smooth peanut butter
