Method
- Pre-heat your oven to 180C (350F, Gas Mark 4)
- Place 12 cupcake cases in a cupcake tin
- Whisk the egg to break up the yoke
- Add the mashed banana, peanut butter, oats, milk and melted butter and mix well (it won't make a smooth combined mixture but should be mixed together)
- Gradually sieve in the flour and baking powder, stirring as you go until it is all combined
- Spoon the mixture evenly into the 12 cases
- Pop in the oven for 15-20 minutes (you want them light in colour so they are still soft)
- Remove from oven and place on a wire rack to cool
- Serve for breakfasts, dessert or a snack and enjoy! (Elian likes them with a dollop of yogurt to make them even softer)
Notes
If you want them as a sweet treat try adding a few chocolate chips or some crushed raspberries
We used Meridian Coconut and Peanut Butter as I happened to have it, but you can use any smooth peanut butter
