After the relative success of my last ‘5 Days of Challenge’ over on our Two Hearts One Roof Vlog Channel we thought we would jump right into another one! So this time we are challenging ourselves to test out 5 Days of Muscle Food Recipes!
Muscle Food have brought out a new Make One Change Hamper which comes with it’s very own recipe folder, containing 25 healthy recipes that are simple to prepare and taste great. So they challenged me to try out 5 of their new recipes to see what I thought of them. So for the next 5 days guys your going to see which recipes we tried.
Today is Day 1 and we loved the look of the Loaded Chicken Quesadilla recipe from Kimberly Melotte who is the Muscle Food Marketing Manager.

Loaded Chicken Quesadilla
Ingredients
- 2 Chicken Breast Fillets
- 2 Whole Grain Wraps
- 60 g Low Fat Cheddar Cheese
- Half a Courgette Grated
- 45 g Sweetcorn
- 3 tbsp Tomato Salsa
- Salad of your choice
- Oil or low calorie cooking spray
Instructions
- Spray a large frying pan with cooking spray and place over a high heat. Add your chicken breasts and fry until cooked through (we found it easiest to butterfly the breasts to help them cook through.
- Once cooked remove from the heat and using 2 forks shred in a large bowl and set aside
- Take your wholemeal wrap and layer your ingredients in this order on one half of your wrap: cheese, courgette, chicken, sweetcorn, salsa and more cheese. Fold the wrap in half so the edges meet
- Spray your pan again and add your quesadilla, fry over high heat on one side until browned, then flip and cook on the other side, your cheese should be melted.
- Transfere to a chopping board and cut into 3 slices, serve with your side salad and enjoy!
