Day 2 of our 5 Days of Muscle Food Recipes is here and this time we decided to try out the Moroccan Meatball and Couscous recipe which was written by Paige Modeste who is a fitness blogger. We love meatballs and couscous and eat them quite often but usually not together, so I was looking forward to testing out this simple recipe to see what we thought. Moroccan Meatballs and Couscous
Ingredients
- 20 x 20g Muscle Food Lean Beef Meatballs
- 1/2 Onion chopped
- 3 Garlic Cloves finely chopped or 1tsp lazy garlic
- 1 Red Onion chopped
- 400 g Tomatoes finely chopped
- pinch of fresh parsley
- 1 tsp Cumin Seeds
- 2 tsp sweetness
- 3 Springs Coriander chopped
- 6 Mint Leaves chopped
- 300 g Couscous
- 1 Spring Onions finely chopped
- 1 Sweet Pepper chopped
- Handful of Dried Cranberries
- 150 g Fresh Kale
Instructions
- Spray a large frying pan with low cal spray and place over a medium heat. Once hot add your onions and garlic and fry for 5 minutes until starting to brown
- Add your meatballs and cook until browned all over, keep stirring
- Add your chopped tomatoes, parsley, cumin seed, sweetener, coriander and mint, mix well, reduce heat and allow to simmer for 15 minutes
- Cook your couscous according to packet, then add your spring onions, red onion, sweet pepper and dried cranberries
- Saute your kale in a separate pan for a few minutes with a pinch of salt.
- Plate up with your kale topped with couscous and finish with your meatballs and tomato sauce and enjoy!
